- 2 cups cold mashed potatoes
- 3 large eggs
- 1 cup shredded cheddar cheese
- ¼ cup bacon bits (optional but amazing)
- ¼ cup chopped chives or green onions
- ¼ cup grated Parmesan cheese (for topping)
- Salt & pepper to taste
- Sour cream (for serving)
🔥 Instructions
- Preheat oven to 400°F (200°C). Grease a muffin tin generously.
- In a bowl, mix mashed potatoes, eggs, cheddar, bacon, and chives until well combined.
- Season with salt and pepper.
- Spoon mixture into muffin cups, filling each about ¾ full.
- Top each puff with a sprinkle of Parmesan cheese.
- Bake for 30–35 minutes until golden and crispy on top.
- Let cool for 5 minutes, then gently remove from the pan.
- Serve warm with sour cream and extra chives.
