- Preheat oven to 350°F (175°C).
- Boil tortellini for 8–10 minutes, then drain and set aside.
- Brown sausage in an oven-safe skillet with olive oil over medium-high heat (5–7 minutes). Break it into crumbles.
- Add onions, sauté until tender (about 3–4 minutes).
- Stir in tomato sauce, parsley, salt, and pepper. Simmer for 5 minutes.
- Mix in tortellini, coating well with sauce.
- Top with mozzarella and Parmesan, then bake for 10–12 minutes until bubbly and golden.
- Garnish with extra parsley and Parmesan. Let cool slightly before serving.
