1. Cook the Potatoes Heat olive oil and butter in a skillet over medium heat. Add diced potatoes and cook for 10–12 minutes, tossing occasionally until golden and crispy. Add sun-dried tomatoes and spinach in the last 2 minutes. Season with salt and pepper.
2. Fry the Bacon In a separate skillet, cook bacon over medium-low heat for about 10 minutes, flipping halfway until crispy.
3. Scramble the Eggs Whisk eggs in a bowl. Spray a skillet or add butter, then cook eggs over medium-low heat, gently folding until fluffy (about 4–5 minutes). Season with salt and pepper.
4. Toast the Bread Toast sourdough slices until golden. Butter if desired.
5. Plate & Garnish Arrange eggs, bacon, potatoes, and toast on a plate. Garnish with chopped green onions and a pinch of paprika.
