Creamy Garlic Shrimp Over Mashed Potatoes!

🍤 Ingredients

For the Shrimp:

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Salt and pepper to taste

For the Creamy Garlic Sauce:

  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 tsp Dijon mustard (optional, for depth)
  • Salt and pepper to taste
  • Fresh thyme or parsley for garnish

For the Mashed Potatoes:

  • 2 lbs potatoes, peeled and cubed
  • ½ cup warm milk
  • ¼ cup butter
  • Salt to taste

👩‍🍳 Instructions

  1. Make the Mashed Potatoes Boil potatoes in salted water until fork-tender (about 15 minutes). Drain, mash with butter and warm milk until smooth. Season with salt and keep warm.
  2. Cook the Shrimp Toss shrimp with paprika, garlic powder, salt, and pepper. Sear in olive oil over medium-high heat for 2–3 minutes per side until pink and slightly crisp. Remove and set aside.
  3. Make the Garlic Cream Sauce In the same pan, melt butter and sauté garlic until fragrant (about 1 minute). Add cream, Parmesan, and Dijon mustard. Simmer until thickened (3–5 minutes). Season to taste.
  4. Combine & Serve Return shrimp to the pan and coat with sauce. Spoon mashed potatoes onto plates, top with shrimp and drizzle with extra sauce. Garnish with thyme or parsley.
