🛋️ Easy Slow Cooker Chicken Stew

Ingredients:

  • 1.5 lbs bone-in skinless chicken thighs or breasts
  • 3 medium potatoes, peeled and chopped
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 bay leaf
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 tsp rosemary
  • 1 tsp salt and ½ tsp pepper
  • 4 cups chicken broth
  • Optional: 1 tbsp cornstarch mixed with 2 tbsp water (for thickening)

👨‍🍳 Instructions:

  1. Prep ingredients: Chop all vegetables and season chicken with salt, pepper, and paprika.
  2. Layer in slow cooker: Add potatoes, carrots, celery, onion, and garlic. Place chicken on top.
  3. Add herbs and broth: Sprinkle thyme, rosemary, and bay leaf. Pour in chicken broth.
  4. Cook: Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours until chicken is tender.
  5. Thicken (optional): Remove chicken, stir in cornstarch slurry, and cook on HIGH for 10 minutes.
  6. Serve: Shred chicken and return to pot. Ladle into bowls and enjoy with crusty bread or rice.
