- Cook the bacon: In a large skillet, fry diced bacon until crispy. Remove and set aside, leaving the drippings in the pan.
- Sauté aromatics: Add chopped onion to the bacon fat and cook until translucent. Stir in garlic and cook for 1 more minute.
- Combine beans: In a large baking dish or Dutch oven, mix the cooked bacon, sautéed onion and garlic, pork and beans, kidney beans, and black beans.
- Make the sauce: In a bowl, whisk together barbecue sauce, ketchup, brown sugar, Worcestershire sauce, mustard, smoked paprika, salt, and pepper.
- Mix & bake: Pour the sauce over the bean mixture and stir well. Cover with foil and bake at 350°F (175°C) for 45 minutes. Uncover and bake another 15 minutes until bubbly and thickened.
- Serve: Let cool slightly before serving. Even better the next day!
