Fasolakia Recipe (Greek Green Beans with Potatoes)

  • 500g green beans, trimmed
  • 400g potatoes, peeled and diced
  • 1–2 onions, chopped
  • 3 garlic cloves, grated
  • 1 can chopped tomatoes (400g)
  • 2 bay leaves
  • 50ml extra virgin olive oil
  • 1 tsp salt
  • Black pepper to taste
  • Fresh parsley, chopped (for garnish)

🍳 Method of Preparation (Tariqat Sti3mal)

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onions and garlic until soft and fragrant.
  3. Add potatoes, stir for 2–3 minutes.
  4. Add green beans, chopped tomatoes, bay leaves, salt, and pepper.
  5. Pour in water just enough to cover the vegetables.
  6. Cover and simmer for 30–40 minutes until potatoes and beans are tender.
  7. Adjust seasoning, garnish with parsley, and serve hot with crusty bread or rice.
