- Olive oil – 1 tbsp
- Unsalted butter – 1 tbsp
- White onion – 100g, finely diced

- Cayenne pepper – 1 tsp

- Tomato paste – 2 tbsp
- White wine – 150ml
- Fish stock – 1 liter
- Live mussels – 250g, cleaned
- Haddock fillets – 2, skinless and sliced
- King prawns – 8, whole
- Lemon juice – from 1 lemon
- Double cream – 30ml
- Salt – to taste
