Method:
- Heat oil and butter in a large pot. Sauté onion and celery until soft.
- Add garlic and ginger; cook until fragrant.
- Stir in flour and spices; cook for 2 minutes.
- Add tomato paste and deglaze with white wine.
- Pour in fish stock and bring to a simmer.
- Add mussels, haddock, and prawns. Simmer until seafood is cooked.
- Finish with lemon juice and cream. Adjust seasoning.
🍞 Sesame Prawn Croutons
Ingredients:
- Prawns – 300g, peeled and chopped
- Garlic – 3 cloves, minced
- Fresh ginger – 7g, chopped
- Egg white – 1
- Light soy sauce – 1 tsp
- White bread slices – 4
- White sesame seeds – 50g
- Black sesame seeds – 50g
- Vegetable oil – for frying
- Salt – to taste
Method:
- Blitz prawns, garlic, ginger, egg white, and soy sauce into a paste.
- Spread paste on bread slices.
- Press paste side into sesame seeds.
- Chill briefly, then fry until golden and crisp.
