Method:

  1. Heat oil and butter in a large pot. Sauté onion and celery until soft.

  5. Pour in fish stock and bring to a simmer.

Ingredients:

  • Prawns – 300g, peeled and chopped
  • Garlic – 3 cloves, minced
  • Fresh ginger – 7g, chopped
  • Egg white – 1
  • Light soy sauce – 1 tsp
  • White bread slices – 4
  • White sesame seeds – 50g
  • Black sesame seeds – 50g
  • Vegetable oil – for frying
  • Salt – to taste

Method:

  1. Blitz prawns, garlic, ginger, egg white, and soy sauce into a paste.
  2. Spread paste on bread slices.
  3. Press paste side into sesame seeds.
  4. Chill briefly, then fry until golden and crisp.
