French Lentil Bacon Soup

🍳 Instructions:

  1. Cook bacon in a stock pot until crisp. Remove and set aside. Leave about ¼ cup of rendered fat in the pot.
  2. Sauté onion in bacon fat until soft (about 8 minutes). Add garlic and cook for 30 seconds.
  3. Add carrots, celery, lentils, salt, pepper, thyme, oregano, and bay leaves. Stir to combine.
  4. Pour in stock, water, and potatoes. Bring to a boil, then cover and simmer on medium-low for 30 minutes.
  5. Smash some potatoes against the pot wall to thicken the soup.
  6. Stir in vinegar and parsley. Add bacon back in, reserving some for garnish if desired.
  7. Serve hot with crusty bread
