French Lentil Bacon Soup
🍳 Instructions:
- Cook bacon in a stock pot until crisp. Remove and set aside. Leave about ¼ cup of rendered fat in the pot.
- Sauté onion in bacon fat until soft (about 8 minutes). Add garlic and cook for 30 seconds.
- Add carrots, celery, lentils, salt, pepper, thyme, oregano, and bay leaves. Stir to combine.
- Pour in stock, water, and potatoes. Bring to a boil, then cover and simmer on medium-low for 30 minutes.
- Smash some potatoes against the pot wall to thicken the soup.
- Stir in vinegar and parsley. Add bacon back in, reserving some for garnish if desired.
- Serve hot with crusty bread
