Ingredients:

  • 2.5 lbs (1.1 kg) beef chuck, cut into 2-inch chunks
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 2 onions, chopped
  • 6 oz bacon, chopped
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 3 tbsp flour
  • 440 ml Guinness beer (1 can)
  • 3 cups chicken or beef broth
  • 4 tbsp tomato paste
  • 2 bay leaves
  • 3 sprigs thyme
  • Optional: mashed potatoes for serving
