  1. Brown the beef: Pat beef dry, season with salt and pepper. Sear in hot oil until browned on all sides. Set aside.
  2. Sauté aromatics: Lower heat, add garlic and onions. Cook 3 minutes. Add bacon and cook until browned.
  3. Add veggies: Stir in carrots and celery. Cook 5 minutes.
  4. Thicken base: Sprinkle flour and stir for 1 minute.
  5. Deglaze: Pour in Guinness, scraping up browned bits. Add broth and tomato paste. Mix well.
  6. Simmer: Return beef to pot. Add bay leaves and thyme. Cover and simmer gently for 2 hours.
  7. Finish: Uncover and simmer 30–45 minutes until beef is fall-apart tender and sauce thickens.
  8. Serve: Skim fat, adjust seasoning, and serve over creamy mashed potatoes or crusty bread.
