📝 Ingredients:
- 1 whole chicken (cut into pieces)
- ½ cup all-purpose flour
- 3 tbsp olive oil
- 1 lb chorizo, sliced
- 1 onion, diced
- 2 cups potatoes, cubed
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 2 cups tomatoes, chopped
- 1 head garlic, cloves peeled and left whole
- 1 cup white wine
- 1 cup chicken stock
- 1 cup kalamata olives
- ½ cup parsley, chopped
- Pinch of red pepper flakes
- Salt and black pepper to taste
- Optional: scallions, Parmesan, crusty bread, white rice
🍳 Instructions:
- Season & Sear: Toss chicken pieces in flour seasoned with salt and pepper. Brown in olive oil until golden. Remove and set aside.
- Build the Base: Sauté onion, garlic, and chorizo until fragrant. Add peppers, potatoes, tomatoes, olives, and red pepper flakes.
- Deglaze & Simmer: Pour in wine and chicken stock. Return chicken to the pot. Simmer uncovered for 1 hour until chicken is tender and sauce is rich.
- Finish & Serve: Stir in parsley and scallions. Serve with rice or crusty bread to soak up the flavorful broth.
