Hilda’s Portuguese Stewed Chicken

📝 Ingredients:

  • 1 whole chicken (cut into pieces)
  • ½ cup all-purpose flour
  • 3 tbsp olive oil
  • 1 lb chorizo, sliced
  • 1 onion, diced
  • 2 cups potatoes, cubed
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 cups tomatoes, chopped
  • 1 head garlic, cloves peeled and left whole
  • 1 cup white wine
  • 1 cup chicken stock
  • 1 cup kalamata olives
  • ½ cup parsley, chopped
  • Pinch of red pepper flakes
  • Salt and black pepper to taste
  • Optional: scallions, Parmesan, crusty bread, white rice

🍳 Instructions:

  1. Season & Sear: Toss chicken pieces in flour seasoned with salt and pepper. Brown in olive oil until golden. Remove and set aside.
  2. Build the Base: Sauté onion, garlic, and chorizo until fragrant. Add peppers, potatoes, tomatoes, olives, and red pepper flakes.
  3. Deglaze & Simmer: Pour in wine and chicken stock. Return chicken to the pot. Simmer uncovered for 1 hour until chicken is tender and sauce is rich.
  4. Finish & Serve: Stir in parsley and scallions. Serve with rice or crusty bread to soak up the flavorful broth.
