500g lamb shoulder or beef chuck, cut into chunks
2 tbsp vegetable oil or butter
1 large onion, sliced
2 carrots, peeled and chopped
2 potatoes, peeled and cubed
1 parsnip or turnip (optional), chopped
2 cups beef or vegetable broth
1 tsp fresh thyme (or ยฝ tsp dried)
Salt and pepper to taste
