Add vegetables and broth β Return the meat to the pot. Add carrots, potatoes, and parsnip. Pour in the broth and add thyme, salt, and pepper.
Simmer gently β Cover and cook on low heat for 1Β½ to 2 hours until the meat is tender and the vegetables are soft.
Serve hot β Ladle into bowls and garnish with fresh parsley. Serve with crusty bread or soda bread.
