Lime-Garlic Steamed Fish

- Prep the Fish Score the fish with diagonal cuts on both sides. Stuff bruised lemongrass into the cavity for aroma.
- Steam the Fish Place fish on a heatproof plate. Steam over boiling water for 10–15 minutes, depending on size, until the flesh is opaque and flakes easily.
- Make the Sauce In a bowl, mix stock, lime juice, fish sauce, sugar, garlic, and chilies. Stir until sugar dissolves.
- Finish and Serve Transfer steamed fish to a serving platter. Pour sauce over the fish, making sure garlic and chilies coat the top. Garnish with coriander and lime slices.
