Prep the lobster

Use kitchen shears to cut the shell and remove the meat. Chop into bite-sized pieces.

Make garlic butter

Melt butter in a pan, add garlic, and cook until fragrant. Stir in parsley and season with salt and pepper. Add wine if using.

Assemble

Place lobster chunks into an escargot dish or mini muffin pan. Spoon garlic butter over each piece.

Add cheese

Sprinkle Havarti generously over the top.

Bake

Bake at 400°F (200°C) for 2 minutes, then broil for 2–3 minutes until bubbly and golden.

Serve

Enjoy hot with toasted bread to soak up all that buttery goodness.
