- 2 lbs ripe tomatoes (heirloom, cherry, or vine-ripened), sliced or chopped
- 1 garlic clove, minced
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh mint, chopped
- 3 tbsp olive oil
- 1Β½ tbsp apple cider vinegar
- Β½ tsp salt

Instructions:
- Prep the tomatoes: Cut into bite-sized pieces or ΒΌ-inch slices. Arrange on a serving platter or shallow dish.
- Make the marinade: In a small bowl, whisk together garlic, parsley, mint, olive oil, vinegar, salt, pepper, and red pepper flakes.
- Marinate: Pour marinade evenly over tomatoes. Let sit for 1β2 hours at room temperature or refrigerate for deeper flavor.
- Serve: Garnish with extra herbs and serve with crusty bread or alongside grilled meats.
