📝 Ingredients:

  • 1 whole chicken (about 3.5 lbs), cut into pieces
  • 1½ tbsp Ras El Hanout (Moroccan spice blend)
  • 1½ tsp ground cinnamon
  • 1 tsp sweet paprika
  • 1 tsp ground ginger
  • 1 tsp black pepper
  • Salt, to taste
  • 2 tbsp extra virgin olive oil
  • 1 medium yellow onion, sliced
  • 4 garlic cloves, minced
  • 1 oz fresh cilantro, chopped
  • 1 lemon, sliced (or preserved lemon for authenticity)
  • ¾ cup green olives
  • ¼ cup raisins
  • ¼ cup dried apricots, chopped
  • 3 tbsp tomato paste
  • 1½ cups low-sodium chicken broth
  • Toasted almonds & fresh cilantro, for garnish (optional)
