- 2 large onions, thinly sliced
- 1 cup raisins (golden or dark)
- 2 tbsp sugar (white or brown)
- 1 tsp ground cinnamon
- 1 tbsp butter or vegetable oil
- A pinch of salt
- Optional: 1/4 tsp ground ginger or saffron threads for extra aroma
- 1/2 cup water (adjust as needed)
๐ฉโ๐ณ Preparation Steps:
- Soak the raisins: Place the raisins in warm water for 10โ15 minutes to soften, then drain.
- Cook the onions: In a pan over medium heat, add butter or oil. Add the sliced onions and a pinch of salt. Stir occasionally until they become soft and translucent (about 10 minutes).
- Add flavor: Stir in the cinnamon, sugar, and drained raisins. Add water to help everything blend and simmer gently.
- Caramelize: Let the mixture cook slowly over low heat for 20โ30 minutes, stirring occasionally, until the onions are golden brown and the sauce is thick and syrupy.
- Serve: Spoon the tfaya over the couscous mound, right on top of the meat and vegetables. It adds a beautiful sweet contrast!
