- Make the Brine In a pot, combine water, brown sugar, hot sauce, and salt. Heat until dissolved, then cool completely. Add chicken pieces to the brine, cover, and refrigerate for at least 1 hour (or overnight for best flavor).
- Prepare the Spicy Glaze Heat oil in a small pan. Add cayenne, brown sugar, garlic powder, salt, and cumin. Stir until fragrant. Set aside.
- Coat the Chicken Mix flour, salt, and pepper in a bowl. Remove chicken from brine, pat dry, and dredge in flour mixture until well coated.
- Fry the Chicken Heat oil to 175°C (350°F). Fry chicken pieces until golden brown and crispy—about 10 minutes per side. Drain on paper towels.
- Finish and Serve Brush each piece of fried chicken with the spicy glaze. Serve on white bread with pickle slices on top.
