Instructions :
Prepare the cod batter: In a bowl, whisk together flour, cold sparkling water (or beer) and baking powder until it is tender. Season the cod strips with salt and pepper.
Prepare Onion Rings: In a shallow dish, season the flour with salt and pepper. In another bowl, pour buttermilk Dip each onion ring in the seasoned flour, then in the butter, and return to the flour for an extra-crispy coating.
