Ingredients:

  • 1 lb peaches, sliced
  • ΒΌ cup sugar
  • 1 tbsp flour
  • Β½ tsp cinnamon
  • Β½ tsp vanilla extract
  • Β½ tbsp butter (cut into small pieces)

To finish:

  • 1 egg (for egg wash)
  • 1 tbsp coarse sugar

Instructions:

  1. Make the dough: Pulse flour, sugar, and salt in a food processor. Add cold butter and pulse until pea-sized. Add ice water gradually until dough clumps. Form into a disk, wrap, and chill for 1 hour.
  2. Prepare filling: Toss peach slices with sugar, flour, cinnamon, and vanilla.
  3. Assemble galette: Roll dough into a 12β€³ circle on parchment. Arrange peaches in the center, leaving a 2β€³ border. Dot with butter. Fold edges over peaches, pleating as needed.
