Ingredients:
For the crust:
- 1β cups all-purpose flour
- 1 tbsp sugar

- 8 tbsp cold unsalted butter
- 6 tbsp ice water
For the filling:
- 1 lb peaches, sliced
- ΒΌ cup sugar
- 1 tbsp flour
- Β½ tsp cinnamon
- Β½ tsp vanilla extract
- Β½ tbsp butter (cut into small pieces)
To finish:
- 1 egg (for egg wash)
- 1 tbsp coarse sugar
Instructions:
- Make the dough: Pulse flour, sugar, and salt in a food processor. Add cold butter and pulse until pea-sized. Add ice water gradually until dough clumps. Form into a disk, wrap, and chill for 1 hour.
- Prepare filling: Toss peach slices with sugar, flour, cinnamon, and vanilla.
- Assemble galette: Roll dough into a 12β³ circle on parchment. Arrange peaches in the center, leaving a 2β³ border. Dot with butter. Fold edges over peaches, pleating as needed.
- Bake: Brush crust with egg wash, sprinkle with coarse sugar. Bake at 425Β°F (220Β°C) for 25β30 minutes until golden and bubbly.
- Serve: Let cool 15 minutes. Serve warm with vanilla ice cream or whipped cream.
