👨🍳 Preparation Steps
Marinate the beef: Mix garlic, spices, tomato paste, wine, beer, and salt. Place the beef in a sealable bag, pour in the marinade, add bay leaves and cinnamon stick, and refrigerate overnight.
Roast: Preheat oven to 400°F (200°C). Spread onions in a roasting pan, place beef on top, and pour in the marinade. Cover and roast for 1 hour 45 minutes.
Finish uncovered: Uncover and roast for another 30 minutes until tender. Let rest, slice, return to pan, and roast again for 30 minutes, spooning sauce over the meat every 10 minutes.

Serve with boiled potatoes, crusty bread, or rice. A glass of red wine from Pico Island wouldn’t hurt either 🍷
