  1. Soak the Beans Rinse and sort the beans to remove debris. Soak them overnight in plenty of water. Drain before cooking.
  2. Prepare the Pot In a large pot or Dutch oven, add the soaked beans, chopped onion, celery, ham hock or salt pork, bay leaves, and water or broth.
  3. Simmer Slowly Bring to a boil, then reduce heat to low. Cover and simmer for 6–8 hours, stirring occasionally. Skim off any foam or fat that rises to the top.
  4. Season Once the beans are tender and creamy, add garlic powder, black pepper, and salt. Taste and adjust seasoning.
  5. Serve Remove the ham hock, shred any meat, and return it to the pot. Serve hot with cornbread, pickles, or even over rice.
