Pinto Beans with Ham Hocks or Salt Pork,

- Soak the Beans Rinse and sort the beans to remove debris. Soak them overnight in plenty of water. Drain before cooking.
- Prepare the Pot In a large pot or Dutch oven, add the soaked beans, chopped onion, celery, ham hock or salt pork, bay leaves, and water or broth.
- Simmer Slowly Bring to a boil, then reduce heat to low. Cover and simmer for 6–8 hours, stirring occasionally. Skim off any foam or fat that rises to the top.
- Season Once the beans are tender and creamy, add garlic powder, black pepper, and salt. Taste and adjust seasoning.
- Serve Remove the ham hock, shred any meat, and return it to the pot. Serve hot with cornbread, pickles, or even over rice.
