- Preheat oven to 375Β°F (190Β°C). Grease a 9Γ13 baking dish.
- Make the filling
- Brown ground beef in a skillet.
- Add onion, bell pepper, and chopped pepperoni. Cook until veggies soften.
- Stir in garlic, pizza sauce, Italian seasoning, ricotta, mozzarella, and turkey bacon. Mix well.
- Assemble the enchiladas
- Spoon filling down the center of each tortilla.
- Roll up and place seam-side down in the baking dish.
- Top and bake
- Pour remaining pizza sauce over enchiladas.
- Sprinkle with shredded mozzarella and garnish with pepperoni slices.
- Bake for 20β25 minutes until bubbly and golden.
