- Prepare the custard:
- In a saucepan, mix flour and a bit of milk until smooth.
- Add the rest of the milk, sugar, cinnamon stick, and lemon peel.
- Heat gently, stirring constantly until thickened. Remove cinnamon and peel.
- Add egg yolks:
- Let the mixture cool slightly.
- Whisk in egg yolks until smooth.
- Prepare pastry:
- Roll out puff pastry and cut into circles.
- Press into muffin tins to form tart shells.
- Fill and bake:
- Pour custard into pastry shells.
- Bake at 250°C (480°F) for 15–20 minutes until golden and slightly blistered.
- Serve:
- Sprinkle with cinnamon or powdered sugar.
- Enjoy warm or cold!
