Pork Scallopini with Lemon & Capers

🧺 Ingredients (Ma9adir):

  • 4 boneless pork cutlets (thinly sliced)
  • Salt and black pepper to taste
  • ½ cup all-purpose flour (for dredging)
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 small shallot, finely chopped
  • 2 garlic cloves, minced
  • ½ cup chicken broth
  • ¼ cup fresh lemon juice
  • 2 tbsp capers, drained
  • Lemon slices (for garnish)
  • Fresh parsley, chopped (for garnish)

👨‍🍳 Method (Tari9a):

1. Prep the Pork:

  • Season pork cutlets with salt and pepper.
  • Lightly dredge each cutlet in flour, shaking off excess.

2. Sear the Cutlets:

  • Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat.
  • Cook pork cutlets for 2–3 minutes per side until golden brown.
  • Remove and set aside on a plate.

3. Make the Sauce:

  • In the same skillet, add remaining butter.
  • Sauté shallots and garlic until fragrant (about 1 minute).
  • Add chicken broth, lemon juice, and capers.
  • Simmer for 3–5 minutes until slightly reduced.

4. Combine & Serve:

  • Return pork cutlets to the pan and spoon sauce over them.
  • Simmer for 2 more minutes to absorb flavor.
  • Garnish with lemon slices and parsley.
