Portuguese Pork and Potato Bake (Porco com Batatas)
👨🍳 Instructions
- Marinate the pork
- In a bowl, mix pork cubes with garlic, red pepper paste, white wine, salt, pepper, and bay leaf. Let marinate for 2 hours.
- Prepare the dish
- Preheat oven to 180°C (350°F).
- Place potatoes and marinated pork in a baking dish. Drizzle with olive oil and reserved marinade.
- Bake
- Cover with foil and bake for 1 hour. Remove foil and bake for another 20–30 minutes until meat and potatoes are golden and tender.
- Serve
- Sprinkle with chopped parsley and serve hot with sautéed greens or a fresh salad.
