- Cook the Rice Boil rice in water until tender. Drain any excess water if needed.
- Infuse the Milk Heat milk with lemon zest until just below simmering. In a separate bowl, whisk egg yolks and temper them by slowly adding a bit of the hot milk while whisking.
- Make the Creamy Base Add tempered eggs to the milk, then stir in sugar, butter, vanilla, and salt.
- Combine & Simmer Mix the milk mixture with the cooked rice. Simmer gently for 15β20 minutes until thick and creamy, like oatmeal.
- Cool & Decorate Remove lemon zest. Pour into serving dishes and let cool. Sprinkle cinnamon on topβsome use stencils to make traditional patterns.
