- Prepare the Cod Soak the salted cod in water for 24–48 hours, changing the water several times. Simmer in boiling water for 20 minutes until tender. Remove skin and bones, then flake finely.
- Boil the Potatoes Cook the potatoes (preferably with skin) until soft. Peel and mash them while warm.
- Mix the Batter In a large bowl, combine mashed potatoes, flaked cod, onion, parsley, and eggs. Season with salt and pepper. Mix until smooth and cohesive.
- Shape the Fritters Use two spoons to form oval-shaped quenelles or roll into small balls by hand.
- Fry Until Golden Heat oil in a deep fryer or pan. Fry fritters in batches until golden brown. Drain on paper towels.
- Serve Hot or Cold Traditionally served with tomato rice, peas rice, or simply with a glass of wine or beer.
