  1. Make the caramel
    • In a saucepan, melt 90g of sugar over medium heat without stirring.
    • Once it turns golden and liquid, quickly pour it into a pudding mold, coating the bottom and sides.
  2. Prepare the custard
    • In a bowl, whisk the eggs with the remaining 200g sugar until smooth.
    • Add the milk and mix well.
  3. Assemble and cook
    • Pour the custard mixture into the caramel-coated mold.
    • Cover with paper towel and seal with a lid.
    • Place the mold in a large pot filled halfway with water (bain-marie style).
    • Cook for 30 minutes from boiling point.
  4. Cool and serve
    • Let it cool completely before unmolding.
    • Refrigerate for a few hours before serving.
