- Make the caramel
- In a saucepan, melt 90g of sugar over medium heat without stirring.
- Once it turns golden and liquid, quickly pour it into a pudding mold, coating the bottom and sides.
- Prepare the custard
- In a bowl, whisk the eggs with the remaining 200g sugar until smooth.
- Add the milk and mix well.
- Assemble and cook
- Pour the custard mixture into the caramel-coated mold.
- Cover with paper towel and seal with a lid.
- Place the mold in a large pot filled halfway with water (bain-marie style).
- Cook for 30 minutes from boiling point.
- Cool and serve
- Let it cool completely before unmolding.
- Refrigerate for a few hours before serving.
