👨🍳 Preparation Steps
1. Roast the Beef:
- Preheat oven to 220°C (425°F).
- Rub beef with olive oil, salt, pepper, garlic, and herbs.
- Roast for 20 minutes, then reduce heat to 180°C (350°F) and cook for 1–1.5 hours depending on desired doneness.
- Let rest before slicing.
2. Make Yorkshire Pudding:
- Whisk flour, eggs, milk, and salt until smooth.
- Let batter rest for 30 minutes.
- Heat oil in muffin tin in oven until very hot.
- Pour batter into hot oil and bake at 220°C (425°F) for 20–25 minutes until puffed and golden.
3. Prepare the Sides:
- Roast potatoes, carrots, and cauliflower with olive oil, salt, and herbs until golden.
- Make mashed potatoes and purée if desired.
4. Make the Gravy:
- Use beef drippings in a pan, add flour and stir to form a roux.
- Gradually add beef stock, whisking until smooth.
- Simmer until thickened, season to taste.
5. Assemble:
- Plate sliced roast beef, Yorkshire pudding, roasted and mashed vegetables.
- Drizzle with rich gravy and serve hot.
