Seafood risotto
🍳 Method:
- Preheat oven to 200°C (390°F).
- Boil potatoes and corn for 5–7 minutes until slightly tender.
- In a large bowl, mix seafood, sausage, corn, and potatoes with olive oil, garlic, paprika, salt, pepper, and lemon juice.
- Spread everything evenly on a baking tray.
- Dot with butter and roast in the oven for 20–25 minutes until seafood is cooked and slightly golden.
- Garnish with fresh parsley and serve hot with lemon wedges or crusty bread.
