Seared Cod with Tomato Butter Sauce

Prep the Cod

Pat fillets completely dry with paper towels.

Season generously with salt and pepper on all sides.

Sear the Fish

Heat olive oil in a large skillet over medium-high heat.

Add cod fillets and cook 3–4 minutes per side until golden brown and flaky.

Remove and set aside.

Make the Sauce

In the same skillet, melt butter.

Add garlic and sauté briefly.

Add tomatoes and cook until they burst and release juices (about 5 minutes).

Pour in white wine and simmer until slightly reduced.

Finish & Serve

Return cod to skillet and spoon sauce over the top.

Simmer gently for 2 minutes.

Garnish with fresh herbs and serve over rice, pasta, or crusty bread.
