Sheet Pan Gnocchi & Sausage Dinner

Ingredients

  • 1 package (16 oz) potato gnocchi (fresh or shelf-stable)
  • 3–4 Italian sausage links (sliced or crumbled)
  • 1 pint cherry or grape tomatoes
  • 1 red onion, sliced
  • 3–4 garlic cloves, smashed
  • 2 tbsp olive oil
  • 1 tsp dried rosemary or Italian herbs
  • Salt & pepper to taste
  • Optional: baby spinach or kale, mozzarella or Parmesan for topping

🔥 Instructions

  1. Preheat oven to 425°F (220°C).
  2. Toss everything—gnocchi, sausage, tomatoes, onion, garlic—with olive oil, herbs, salt, and pepper on a large sheet pan.
  3. Spread evenly and roast for 20–25 minutes, stirring once halfway through, until gnocchi are golden and tomatoes burst.
  4. Optional finish: Add fresh greens and cheese during the last 5 minutes of baking.
  5. Serve hot, maybe with a drizzle of balsamic glaze or a sprinkle of chili flakes for extra zing.
