Shrimp-Crab Fajita Roll-Up Bombs 

Crispy, cheesy rolls stuffed with shrimp, crab, and fajita veggies—perfect for game day or appetizers!
Ingredients:
– 8 large flour tortillas
– 1 cup cooked shrimp, chopped
– 1 cup crab meat, drained
– 1 bell pepper, thinly sliced
– 1 onion, thinly sliced
– 1 cup shredded Monterey Jack cheese
– 1 tsp fajita seasoning
– 2 tbsp olive oil
– 1/4 cup sour cream (for dipping)
– Fresh cilantro, chopped (for garnish)
Directions:
1. Heat olive oil in a pan over medium heat. Sauté bell pepper and onion until soft, about 5 minutes.
2. Add shrimp, crab, and fajita seasoning. Cook for 2-3 minutes, then remove from heat.
3. Lay tortillas flat, divide the shrimp-crab mixture evenly, and sprinkle with cheese.
4. Roll tightly, tucking in the sides as you go. Secure with toothpicks if needed.
5. Heat a clean pan over medium heat. Lightly toast the rolls seam-side down until golden, about 2 minutes per side.
6. Slice into bite-sized pieces, garnish with cilantro, and serve with sour cream.
