- 2 tbsp vegetable oil

- Salt and black pepper (to taste)
- 3 onions, sliced
- 3 bay leaves
- 1 bunch fresh thyme
- 1 bulb garlic, crushed
- 300 ml beef stock
- 700 ml dark ale or beer
- 1 large marrowbone (optional, for richness)
- 200 g baby onions (peeled)
🥧 For the Pie Top:
- 2 sheets (300 g each) ready-rolled puff pastry
- 1 egg (beaten, for egg wash)

- Mashed potatoes
- Butter and double cream (for mash)
