🧾 Ingredients

🥩 For the Filling:

  • 2 kg shin of beef, diced
  • 2 tbsp vegetable oil
  • 2 tbsp plain flour
  • Salt and black pepper (to taste)
  • 3 onions, sliced
  • 3 bay leaves
  • 1 bunch fresh thyme
  • 1 bulb garlic, crushed
  • 300 ml beef stock
  • 700 ml dark ale or beer
  • 1 large marrowbone (optional, for richness)
  • 200 g baby onions (peeled)

🥧 For the Pie Top:

  • 2 sheets (300 g each) ready-rolled puff pastry
  • 1 egg (beaten, for egg wash)

  • Mashed potatoes
  • Butter and double cream (for mash)
