Instructions
Sear the Beef
Toss beef with 1 tbsp oil, salt, and pepper. Sear in a hot pan until browned. Transfer to slow cooker.
Toast Spices & Deglaze
In the same pan, toast caraway seeds in 1 tbsp oil for 1 minute. Add red wine and simmer 2 minutes. Pour into slow cooker.
Build the Stew
Add onions, peppers, garlic, paprika, smoked paprika, flour, and remaining seasoning. Stir to coat.
Add Liquids
Stir in chopped tomatoes, tomato paste, beef stock, sugar, and bay leaves.
Slow Cook
Cover and cook on low for 8 hours until beef is tender and sauce is rich.
Serve
Swirl in a spoonful of yogurt and serve with rice, mashed potatoes, or crusty bread.
