Slow Cooker Lamb Shanks

Instructions

  1. Brown the Shanks
    • Heat oil in a pan. Season lamb with salt and pepper, then brown on all sides. Transfer to slow cooker.
  2. Sauté Aromatics
    • In the same pan, sauté onion, carrots, and garlic until softened. Stir in tomato paste and cook for 1 minute.
  3. Deglaze & Build Sauce
    • Add wine and bring to a boil. Stir in stock, bay leaves, and thyme. Pour over lamb in slow cooker.
  4. Slow Cook
    • Cover and cook on low for 6–8 hours until lamb is tender and falling off the bone.
  5. Thicken Sauce (Optional)
    • Remove lamb and keep warm. Simmer sauce on high or transfer to a pan and reduce. Stir in flour slurry if needed.
  6. Serve
    • Plate lamb shanks with sauce over mashed potatoes, polenta, or crusty bread.
