Slow Cooker Lamb Shanks
Instructions
- Brown the Shanks
- Heat oil in a pan. Season lamb with salt and pepper, then brown on all sides. Transfer to slow cooker.
- Sauté Aromatics
- In the same pan, sauté onion, carrots, and garlic until softened. Stir in tomato paste and cook for 1 minute.
- Deglaze & Build Sauce
- Add wine and bring to a boil. Stir in stock, bay leaves, and thyme. Pour over lamb in slow cooker.
- Slow Cook
- Cover and cook on low for 6–8 hours until lamb is tender and falling off the bone.
- Thicken Sauce (Optional)
- Remove lamb and keep warm. Simmer sauce on high or transfer to a pan and reduce. Stir in flour slurry if needed.
- Serve
- Plate lamb shanks with sauce over mashed potatoes, polenta, or crusty bread.
