  1. Prep the Ribs: Trim ribs St. Louis style. Rub with mustard BBQ sauce and dry rub. Let sit until the rub appears moist.
  2. Smoke the Ribs: Smoke ribs at 250°F for 3–4 hours until mahogany-colored. Wrap in foil and continue cooking until tender (about 6 hours total).
  3. Make the Beans: In a cast iron skillet, combine beans, onion, bell pepper, garlic, chipotles, BBQ bean sauce, mustard sauce, and stock. Mix well.
  4. Smoke the Beans: Place skillet under the ribs in the smoker to catch drippings. Smoke uncovered for 3 hours until thick and flavorful.
  5. Finish & Serve: Slice ribs and serve over or alongside the smoky beans. Garnish with fresh herbs or a splash of vinegar for brightness.
