Instructions
Prep the Greens
Remove thick stems and ribs from collard greens. Stack leaves, roll tightly, and slice into ½-inch strips.
Cook the Bacon
In a large pot, cook bacon over medium heat until crispy. Remove and set aside.
Sauté Aromatics
In the bacon fat, cook onion until soft and golden.
Build the Flavor
Add broth, vinegar, sugar, red pepper flakes, and hot sauce. Stir well.
Add Greens
Add collard greens in batches, stirring until wilted. Cover and simmer on low for 1 hour, stirring occasionally.
Finish & Serve
Sprinkle cooked bacon on top. Season with salt and pepper. Serve hot with cornbread or grilled meat.
