Strawberry Cheesecake Roll

🍓 Ingredients

  • Cake Roll:
    • 6 eggs
    • 1½ cups sugar (divided)
    • 2 tbsp oil
    • 2 tsp baking powder
    • ½ tsp salt
    • 2 tsp vanilla extract
    • 1½ cups flour
    • ¼ cup powdered sugar (for dusting)
  • Filling:
    • 8 oz cream cheese, softened
    • 1 tbsp vanilla extract
    • 2 cups fresh strawberries, sliced

👩‍🍳 Instructions

  1. Preheat oven to 350°F (180°C). Line a baking sheet with parchment paper.
  2. Make the cake batter: Whisk eggs until pale yellow. Add 1¼ cups sugar, oil, baking powder, salt, and vanilla. Fold in flour until smooth.
  3. Bake for 10–15 minutes until set. Invert onto a powdered sugar-dusted towel and roll up gently. Chill for 30 minutes.
  4. Prepare filling: Mix cream cheese, remaining ¼ cup sugar, and vanilla until smooth.
  5. Assemble: Unroll cake, spread cream cheese filling, top with strawberries, and roll it back up.
  6. Finish: Dust with powdered sugar, slice, and serve!
