- Cake Roll:
- 6 eggs
- 1½ cups sugar (divided)
- 2 tbsp oil
- 2 tsp baking powder
- ½ tsp salt
- 2 tsp vanilla extract
- 1½ cups flour
- ¼ cup powdered sugar (for dusting)
- Filling:
- 8 oz cream cheese, softened
- 1 tbsp vanilla extract
- 2 cups fresh strawberries, sliced
👩🍳 Instructions
- Preheat oven to 350°F (180°C). Line a baking sheet with parchment paper.
- Make the cake batter: Whisk eggs until pale yellow. Add 1¼ cups sugar, oil, baking powder, salt, and vanilla. Fold in flour until smooth.
- Bake for 10–15 minutes until set. Invert onto a powdered sugar-dusted towel and roll up gently. Chill for 30 minutes.
- Prepare filling: Mix cream cheese, remaining ¼ cup sugar, and vanilla until smooth.
- Assemble: Unroll cake, spread cream cheese filling, top with strawberries, and roll it back up.
- Finish: Dust with powdered sugar, slice, and serve!
