For the Pork Belly:

1–1.5 kg pork belly (skin scored)

4 cloves garlic (sliced or crushed)

Fresh rosemary or thyme

Salt & black pepper

Olive oil

For the Roast Potatoes:

4–5 medium potatoes (peeled and cut into chunks)

Salt

Vegetable oil or duck fat

For the Yorkshire Pudding:

100g plain flour

2 eggs

150ml milk

Pinch of salt

Sunflower oil or beef drippings (for the tin)

Vegetables:

3–4 carrots (peeled and halved)

Cabbage or green vegetables (lightly boiled or steamed)

Salt, butter (optional)

For the Gravy:

Meat juices from the pork

1 tbsp plain flour

300ml stock (beef or chicken)
