Zigni (Beef Stew)

Zigni is a bold, spicy beef stew that hails from Eritrea πŸ‡ͺπŸ‡· β€” rich in tomato, infused with berbere spice, and slow-cooked until the meat is melt-in-your-mouth tender. It’s traditionally served with injera, the spongy sour flatbread, but rice or crusty bread works beautifully too.

Ingredients
