- Prepare the spice paste
- Blend garlic, onions, chili, ginger, galangal, turmeric, candlenuts, and coriander into a smooth paste (no water added).
- Sautรฉ the paste
- Heat oil in a wok or pot. Sautรฉ the spice paste over low heat until fragrant and oil separates.
- Add beef & aromatics
- Stir in beef cubes, lemongrass, cardamom, cloves, kaffir lime leaves, turmeric leaves, and asam keping. Mix well.
- Simmer with coconut cream
- Pour in coconut cream and bring to a boil. Reduce heat and simmer uncovered for 2โ3 hours, stirring occasionally. Add water if needed.
- Reduce & caramelize
- Continue cooking until the liquid evaporates and the beef turns dark brown. Stir frequently to prevent sticking.
- Finish & serve
- Adjust salt and sugar to taste. Serve with steamed rice or nasi lemak.
