👨‍🍳 Instructions

  1. Prepare the spice paste
    • Blend garlic, onions, chili, ginger, galangal, turmeric, candlenuts, and coriander into a smooth paste (no water added).
  2. Sauté the paste
    • Heat oil in a wok or pot. Sauté the spice paste over low heat until fragrant and oil separates.
  3. Add beef & aromatics
    • Stir in beef cubes, lemongrass, cardamom, cloves, kaffir lime leaves, turmeric leaves, and asam keping. Mix well.
  4. Simmer with coconut cream
    • Pour in coconut cream and bring to a boil. Reduce heat and simmer uncovered for 2–3 hours, stirring occasionally. Add water if needed.
  5. Reduce & caramelize
    • Continue cooking until the liquid evaporates and the beef turns dark brown. Stir frequently to prevent sticking.
  6. Finish & serve
    • Adjust salt and sugar to taste. Serve with steamed rice or nasi lemak.
