👨🍳 Instructions:
1. Sauté the base
- Heat olive oil in a large pan.
- Add carrot, onion, and celery. Cook until soft.
2. Brown the meat
- Add ground beef and pork. Cook until browned.
- Drain excess fat if needed.
3. Deglaze and build flavor
- Pour in red wine and reduce by half.
- Stir in tomato paste, passata, half the beef stock, salt, pepper, and bay leaf.
4. Simmer low and slow
- Let simmer uncovered for 2½ hours.
- Stir occasionally and top up with remaining stock as needed.
5. Serve
- Toss with cooked pasta or layer into lasagna.
- Garnish with Parmesan and fresh parsley.
