Chili Pineapple Sauce

🔥 Ingredients

  • 1 cup pineapple juice (fresh or store-bought)
  • ½ cup apple cider vinegar or rice vinegar
  • 1 tablespoon minced garlic
  • 1–2 tablespoons red chili flakes (adjust to taste)
  • 1½ cups white sugar
  • 1 tablespoon tomato ketchup (optional for depth)
  • 1 teaspoon salt
  • 2 tablespoons cornflour
  • 4 tablespoons cold water

🍳 Instructions

  1. Simmer the base: In a heavy-bottomed pan, combine pineapple juice, vinegar, sugar, salt, and garlic. Bring to a boil over medium heat.
  2. Add heat: Stir in chili flakes and optional ketchup. Let it boil for 5 minutes to blend flavors.
  3. Thicken it up: Mix cornflour and cold water in a bowl until smooth. Slowly stir into the sauce while simmering. Keep stirring to avoid lumps.
  4. Cool and store: Once thickened, remove from heat. Let it cool, then pour into a sterilized jar. Refrigerate and enjoy for up to 2 weeks.

This sauce is a tropical explosion of sweet and spicy—great with chicken, shrimp, or even spring rolls. Want to spice it up further or make it milder? Just tweak the chili flakes to your liking.
