Roasted Leg of Lamb – Dish Journal

🧄 Ingredients:

  • 1 leg of lamb (about 2–2.5 kg / 4.5–5.5 lb)
  • 3–4 garlic cloves, sliced
  • 2 tablespoons fresh rosemary leaves
  • Juice of 1 lemon
  • 3 tablespoons olive oil
  • Salt and freshly ground black pepper
  • 1 cup lamb or vegetable stock (optional, for moisture)

🍳 Instructions:

  1. Preheat oven to 180°C (350°F).
  2. Prepare the lamb: Make small cuts all over the meat. Insert garlic slices and rosemary into each cut.
  3. Season: Mix olive oil, lemon juice, salt, and pepper. Rub this mixture all over the lamb.
  4. Roast: Place the lamb in a roasting pan. Pour stock around the base if using. Roast for about 1 hour 45 minutes to 2 hours, depending on how well done you like it.
  5. Rest: Let the lamb rest for 15–20 minutes before slicing.

  • Mint sauce or jelly
