1 cup lamb or vegetable stock (optional, for moisture)
🍳 Instructions:
Preheat oven to 180°C (350°F).
Prepare the lamb: Make small cuts all over the meat. Insert garlic slices and rosemary into each cut.
Season: Mix olive oil, lemon juice, salt, and pepper. Rub this mixture all over the lamb.
Roast: Place the lamb in a roasting pan. Pour stock around the base if using. Roast for about 1 hour 45 minutes to 2 hours, depending on how well done you like it.
Rest: Let the lamb rest for 15–20 minutes before slicing.
